Maple Frosted Apple Cobbler Loaf

My Mum always makes a great Apple Cake and I was thinking how I could enhance it with the addition of our soft-baked Granola, so I added a delicious Maple Frosting and sprinkled the top with Honey & Cinnamon granola……Wow, It was yummilicious!


🟠 300g self raising flour
🟠 1 tsp baking powder
🟠 1 tsp cinnamon
🟠 Pinch of sea salt
🟠 125g of light muscavado sugar
🟠 250ml of whole milk
🟠 2 small apples, peeled, cored and grated
🟠  100g of unsalted butter melted
🟠 2 medium eggs
🟠  100g Apple Cobbler Soft granola
🟠 25g Sultanas

Maple Frosting ingredients

🟠 200g of sifted icing sugar
🟠 100g of unsalted butter at room temperature
🟠 50ml of maple syrup
🟠 1 tsp of vanilla extract

Method for making Loaf

1) Preheat oven to 180 degrees C.
2) In a large mixing bowl pour in melted butter. Add sugar, eggs, milk and mix well.
3) Gently fold in the sifted flour, salt and cinnamon.
4) Add grated apples, 50g of the granola and the sultanas.
5) Fill the loaf tin and bake for 25 minutes testing with a knife and making sure the knife comes out clean
7) Remove cake from oven and allow to cool.

Only add the frosting when the cake is completely cooled. Sprinkle the rest of the granola on top of the frosting.

Maple Frosting method

1) Whisk together the butter, vanilla and maple syrup.
2) Add sifted icing sugar a bit at a time and beat on low.

Remember to scrape the sides of the bowl and if it becomes too dry add a dash of milk.
